Journey to Lose 100 Pounds

In 2024 I pledged to dedicate myself to self discipline. My goals are to be strong and lose 100 lbs.

 Recipes (High Protein, Calorie Deficit)

  • Per Serving:
    590 Kcals
    28g Protein
    64g Carbs
    24g Fat

    2 Servings Per Recipe

    Ingredients:
    280g of Firm Tofu
    Seasonings of Choice (I use Garlic Powder, Adobo, Paprika and Pepper)
    250g of Asparagus (Washed & Ends Trimmed)
    1 cup of Kimchi
    250g of Pre-Cooked or Prepared rice of your choice
    30-60ml of Sriracha Type Hot Sauce
    2 tbsp Soy Sauce
    6g of Honey
    1 tbsp of Sesame Oil
    1/2 tbsp of Salted Butter
    20g of Cornstarch

    Instructions:
    1. Add sesame oil to a skillet and set on medium high heat.
    2. Cut tofu into 1/2” x 1/2” squares.
    3. Put tofu squares in bowl and toss in seasonings of choice until evenly coated.
    4. Put cornstarch in separate bowl and individual dip each side of tofu in cornstarch until thoroughly and evenly coated.
    5. Place tofu in skillet in an even layer. Evenly sear on each side until desired level of crispiness. Remove from Skillet.
    6. Brush asparagus with butter and season with desired seasonings. (I like to use a Garlic & Herb mix or a Pepper Mix for asparagus)
    7. Add asparagus to Airfryer and set to airfry or roast for 400 degress around 9-12 minutes.
    8. Return to skillet and set to medium heat. Add 1 cup of kimchi to skillet and heat.
    9. Add tofu back into skillet and incorporate with kimchi.
    10. Split into two servings. Spit rice between the two servings. Split asparagus between the two servings. And enjoy!
